Why ecological

We do consider ourselves ecological because

  1. We have a reforestation program that has already planted more than 8,000 trees.
  2. Glass bottles consumed in the restaurant are then converted into drinking glasses, vases, and even building materials.
  3. We separate garbage into different bins for proper disposal and recycling.
  4. The fruit and vegetables we grow at our bio-garden are all organic as we do not use pesticides or chemical fertilizers and is naturally irrigated with river water.
  5. All fish and shrimp served in the restaurant do come from fish farms because we think that the sea is being over-exploited.
  6. All of our desserts are made with brown sugar and/or stevia as it is healthier than white sugar.
  7. Our jams and marmalades are prepared at the ranch without preservatives or white sugar.
  8. Our Honey Mead is a natural wine with no additives or techniques that interfere with its development.
  9. Our mayonnaise contains 50% of yogurt, therefore it is truly light.
  10. We use olive oil for almost all of our preparations.
  11. All our pickles, chutneys and sauces are homemade and contain no preservative or any chemical element, therefore 100% natural.
  12. The wood used for our restaurant oven comes from Algarrobo trees that have been felled by nature in our forest.
  13. The oven used for our restaurant is environmentally friendly because it does not produce smoke.
  14. We do not use MSG as it affects parts of the brain that regulate appetite and satiety sensation.
  15. We do not put salt shakers on the table to avoid over-consumption of salt since it affects the health of people. If people do ask for it, we’ll bring the salt shaker to their table.
  16. The water used in the kitchen is filtered and is then diverted to our forest for use in watering the trees of our reforestation program.
  17. All organic waste from the kitchen and the restaurant are integrated into our compost which is then used to fertilize our bio-garden and forest.
  18. The wastewater from the toilets of the restaurant and entertainment area are directed to a bio-digester which then processes it and produces a fertilized water that is used to irrigate our reforestation programs.
  19. All our bungalows do have solar thermal showers.
  20. The Hualtaco wood used in the bungalows is recycled from old farm houses that were torn down.
  21. The iron fences of the bungalows are recycled from very old houses that were torn down.
  22. Some of the doors and / or windows of the bungalows are recycled from very old houses that were torn down.
  23. Drainage (sewage) is connected to a bio-digester which then processes it and produces fertilized water that is used to irrigate our reforestation programs.
  24. Bathrooms unload their gray water (water from showers and sinks) to water plants around the bungalows.
  25. We use vinegar, baking soda and lemon instead of chemical detergents to clean everything in the eco-lodge.
  26. We use bio-degradable soap made in our farm to wash the bed linen of the lodge.
  27. We do never kill our goats ant treat them very well. In exchange they do give us milk that is later used for our goat milk soaps that we do use in our lodge.
  28. The used vegetable oil from our restaurant is partly used for our goat milk soap.
  29. In November 2014 we did get the ISO 14001 certification.

All this and more make us a true Eco-Fundo
